"I got this recipe over 20 years ago," reports Margery Bryan of Royal City, Washington. "I've tried several diabetic recipes, and this is one of the best."

Ingredients

  • 1 (20-ounce) can unsweetened pineapple
  • 1 cup buttermilk
  • 2 teaspoons vanilla extract
  • 2 teaspoons liquid sweetener
  • Mint leaves, optional

Directions

Drain pineapple, reserving 1/2 cup juice. Freeze pineapple chunks. Place juice, buttermilk, vanilla, sweetener and frozen pineapple into a blender container. Beat until smooth. Pour into glasses and garnish with mint if desired. Serve immediately. Yield: 5 servings.

"Delicious!! This is a keeper. I only froze half the pineapple chunks (just refrigerated the rest) and it turned out great. I also used all the juice from the can. Refreshing, light and will definitely make again."

"My husband is a diabetic and he hates buttermilk. He drank this smoothie and absolutely loved it! I didn't tell him it had buttermilk in it. lol So easy if you remember to put the pinapple in the freezer the night before."
