The cool, refreshing crunch of Pineapple Coleslaw makes it a welcome addition to springtime meals. The pineapple lends a sweet tang to this quick-fix salad submitted by field editor Shirley Glaab of Hattiesburg, Mississippi.
TOTAL TIME: Prep/Total Time: 10 min. YIELD:4 servings


  • 2 cups coleslaw mix
  • 1 cup unsweetened crushed pineapple, drained
  • 1/3 cup shredded carrot
  • 3 medium radishes, shredded
  • 1/4 teaspoon celery seed
  • 1/3 cup reduced-fat mayonnaise


  • 1. In a large bowl, combine the first five ingredients. Add mayonnaise and toss to coat. Cover and refrigerate until serving. Yield: 4 servings.

"This is a nice change of pace to my normal tart coleslaw. I like to pair this with grilled ham and grilled potatoes and onions. My family loves it!"

"I made this for a family dinner. Overall, reviews were mixed. My niece and I did not like it at all. Luckily, my parents really liked it and took home all of the leftovers. That worked out good because I hate to waste food and money."
