Pineapple Chicken Salad Sandwiches
These sandwiches are always welcome at lunchtime around our house. Sweet pineapple and crunchy pecans are nice additions to ordinary chicken salad. —Carol Alexander, Midland, Michigan

I altered this recipe to fit what I had and what we like. We did not have and pecans but we did have slivered almonds so those went in as did some craisins and a chopped granny smith apple and curry powder. We were running low on mayo so I added extra pineapple, I left out the garlic salt, onion salt, pickle relish and onion. Then I served this on freshly baked potato rolls. My son had 2 and loved them. I liked the crunch of the apple and the sweetness of the craisins and pineapple. I may make this again but I would like to have more mayo next time.
I didn't have paprika in the house as I ran out. I made this recipe without it. It is delicious!!!!
This is a family favorite sometimes I add cranberries chopped apple and almonds and a hint of curry
These were delicious. My husband loved the sweetness of the pineapple. I omitted the pecans as I used a nutty bread for the sandwiches.
Loved them!! Husband requested chicken salad for lunch for Father's Day, he doesn't like pineapple, but raved about these..... what he doesn't know won't hurt him...LOL
I used 2 large cans of chicken instead and it tasted great. Simple to make, too!Omitted nuts for my daughter and added extra celery for more crunch.
A wonderful mix of flavors! Since I used canned chicken, recommend a little less mayo, but otherwise has been a hit with my crew!
