I had some ginger ale I wanted to use up, so used that in place of lemon-lime soda (which I have used before). It was great! Even using over 1.5lbs of white lake perch, I still had a good 1/2C of the pancake mix left over, so will probably scale that back a little next time. Also added a little seasoned salt to the mix with the pepper. Perfect perch.
Perch isn't my favorite fish. However this recipe is definitely one I will make again. It was wonderful.
