Peasant Soup for One Recipe

Peasant Soup for One Recipe

In the mood for soup? There's no need to open a can when it's so easy to simmer up a bowl of this soup. I first has this at a favorite restaurant. When it was removed from the menu, I duplicate it at home using herbs from my garden.—Kay Harris, Armarillo, Texas

"I have made this twice now, once with the chicken and once without because I decided spur of the moment to make it. I don't have tarragon, so I just used rosemary. My only complaint would be that it only makes one bowl, so no going back for seconds."
