Peanut Butter Oatmeal Squares


  • 1 cup shortening
  • 1 cup sugar
  • 1 cup packed brown sugar
  • 2/3 cup peanut butter
  • 2 eggs
  • 1/3 cup water
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1-1/2 cups quick-cooking oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • ICING:
  • 1/3 cup butter, softened
  • 2/3 cup peanut butter
  • 2 cups confectioners' sugar
  • 1/3 cup 2% milk


  • 1. In a large bowl, cream the shortening, sugars and peanut butter until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in water and vanilla. Combine the flour, oats, baking powder, baking soda and salt; beat into creamed mixture just until combined. Pour into a greased 15x10x1-in. baking pan.
  • 2. Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  • 3. In a small bowl, beat the icing ingredients until smooth. Pour over warm bars. Cool on a wire rack.

    These PB bars will go quick! Usually make half a recipe using a 11x7 glass pan. Easy to assemble. Love the fact that topping goes on warm, no need to wait to frost! But wait until completely cool to cut. Perfect for snow shoveling kids to enjoy! As a volunteer feild editor for Taste of Home magazine I love using a variety of recipes that use classic ingredients.
