Oven-Roasted Potatoes Recipe

These golden, melt-in-your-mouth potatoes go perfectly with roast beef. They make a homey side dish that's also convenient because they can share the oven with the baked apple slices Mom serves for dessert. -Linda Gaido, New Brighton, Pennsylvania
TOTAL TIME: Prep: 10 min. Bake: 45 min. YIELD:4 servings


  • 4 large baking potatoes (about 2 pounds)
  • 2 tablespoons butter, melted
  • 2 teaspoons paprika
  • 1 teaspoon salt
  • 1/2 teaspoon pepper


  • 1. Peel potatoes and cut into large chunks; place in a shallow 2-qt. baking dish. Drizzle with butter; toss to coat. Sprinkle with the paprika, salt and pepper.
  • 2. Bake, uncovered, at 350° for 45-60 minutes or until potatoes are tender. Yield: 4 servings.

"The simplicity of these ingredients does not detract from its deliciousness. I used three large "new" waxy potatoes because that is what I had. While prepping the potatoes, I melted 1.5 tablespoons of butter and .5 tablespoon oil with the seasonings. Added some garlic powder, too. Tossed in the potatoes and mixed all to coat. Roasted them in my countertop oven. Wonderful side dish! Will add this to my keeper recipe file."

"We really enjoyed this recipe! Potatoes were crispy on the outside and tender inside. easy to prepare and additional spices can easily be used for different flavors. I did sprinkle with Mrs. Dash's original, will try a different blend next time!!"

"This is a good basic recipe. I added chopped onions, which definitely improved the taste. If I were preparing a roast of some kind with these potatoes I think I'd add the potatoes to the roasting pan to add flavor, but they are good on their own."
