Orange Macadamia Nut Cookies

  • 1 cup butter, softened
  • 1 cup confectioners' sugar
  • 1 large egg yolk
  • 2 tablespoons orange juice
  • 2 teaspoons grated orange zest
  • 2 cups all-purpose flour
  • 1/2 cup cornstarch
  • 1/2 cup macadamia nuts or blanched almonds
  • 1 cup confectioners' sugar
  • 4 teaspoons butter, softened
  • 1 tablespoon orange juice
  • 1/2 teaspoon grated orange zest


  • In a large bowl, cream butter and confectioners' sugar until light and fluffy. Beat in the egg yolk, orange juice and zest. Combine flour and cornstarch; add to creamed mixture and mix well. Stir in nuts.
  • Roll into 1-1/4-in. balls; place 2 in. apart on ungreased baking sheets. Gently flatten with the bottom of a glass dipped in sugar. Bake at 350° for 12-15 minutes or until edges begin to brown. Remove to wire racks to cool completely.
  • Combine frosting ingredients in a bowl; beat until smooth. Frost cookies.

    These cookies were very good. I would make them again! A bonus feature is it made the exact amount (3-1/2 doz) as stated in the recipe. Sometimes that doesn't work out as well.

    The cornstarch makes these cookies crisp like vanilla wafers, then there is the tangy orange...fantastic. A perfect cookie.

    Have made this several times, the very best. Have also added some dried cranberries, came out very good. Big brother, who is not much of a cookie person, really liked them. A keeper
