Orange Crispies

YIELD: 3-1/2 dozen.
Add a splash of little sunshine to your cookie jar with this recipe. When I want to spread some cheer, I'll bake up a double batch to share. —Ruth Gladstone, Brunswick, Maryland
Ingredients

1 cup shortening

1 cup sugar

1 large egg, room temperature

1-1/2 teaspoons orange extract

1/2 teaspoon salt

1-1/2 cups all-purpose flour

Optional: Sugar or orange-colored sugar
Directions

In a small bowl, cream shortening and sugar until light and fluffy, 5-7 minutes. Beat in the egg, extract and salt. Add flour; mix well. Drop rounded tablespoonfuls of dough 2 in. apart onto ungreased baking sheets.

Bake at 375° until edges begin to brown, about 10 minutes. Cool for 1-2 minutes; remove from pans to wire racks. If desired, sprinkle warm cookies with sugar.
