Onion Fried Chicken Recipe
- 2 boneless skinless chicken breast halves (5 ounces each)
- 2 tablespoons honey mustard
- 1/2 cup crushed french-fried onions
- 1. Coat chicken with honey mustard, then roll in crushed onions. Place on a foil-lined baking sheet. Bake at 375° for 20-25 minutes or until chicken juices run clear. Yield: 2 servings.
1 each: 310 calories, 14g fat (3g saturated fat), 79mg cholesterol, 321mg sodium, 15g carbohydrate (5g sugars, 1g fiber), 31g protein. Diabetic Exchanges: 4 lean meat, 2 fat, 1 starch.

"I'm only giving this 4 stars cause my son liked it. I didn't dislike it, but if it weren't for his really liking it and commenting on the smell before it was served, I'd never make it again. While the chicken came out surprisingly juicy for baked chicken without a proper sear, the fried onions were soggy. Guess I was expecting them to still be crispy. I think I could have the same result having just used the honey mustard. The onions on the bottom were mush. The only way around this that I know of would be to apply the onions 5 minutes or so before done and just on one side."
