Ingredients

  • 1 large onion, chopped
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • Pepper to taste
  • 4 cups whole milk
  • 2 cups shredded Colby-Monterey Jack cheese
  • Seasoned salad croutons
  • Optional: Grated Parmesan cheese and minced chives

Directions

  1. In a large saucepan, saute the onion in butter. Stir in the flour, salt and pepper until blended. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened.
  2. Stir in cheese until melted. Serve with croutons and; if desired, top with Parmesan cheese and minced chives.
