Okra Roasted with Smoked Paprika

Ingredients

  • 3 pounds fresh okra pods
  • 3 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 1-1/2 teaspoons smoked paprika
  • 1/4 teaspoon garlic powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper

Directions

  • Preheat oven to 400°. Toss together all ingredients. Arrange in a 15x10x1-in. baking pan; roast until okra is tender and lightly browned, 30-35 minutes.
