Nuts and Seeds Trail Mix

Ingredients

  • 1 cup salted pumpkin seeds or pepitas
  • 1 cup unblanched almonds
  • 1 cup unsalted sunflower kernels
  • 1 cup walnut halves
  • 1 cup dried apricots
  • 1 cup dark chocolate chips

Directions

  • Place all ingredients in a large bowl; toss to combine. Store in an airtight container.

1/3 cup: 336 calories, 25g fat (6g saturated fat), 0 cholesterol, 96mg sodium, 22g carbohydrate (13g sugars, 4g fiber), 11g protein.

    I was interested in the trail mix recipe for the trail mix. I buy it for my grandson but I think I will make him this trail mix. I would suggest to the person that is a diabetic to use sugar free chocolate chips. I use to put them in cookies that I made for those who could not eat the regular chocolate chips in cookies. I also bought small sugar free Hershey candy bars, cut them up and used them in cookies. I will use the sugar free chips for the mix for Christmas. I will give some to my friend who is a diabetic.

    I'm diabetic and while I love the nuts and seeds in this trail mix, I need to NOT have the chocolate chips in it. Any suggestions for a substitute for them?

    Great Recipe! I store mine in the freezer. Can be eaten by the handful, mix with greek yogurt or add to cooked oatmeal. I am a diabetic, this works great within my eating plan.
