When I made these cookies for my boys while they were growing up, it was a real challenge to keep them away from the kitchen to let these cookies cool. I still make these mouthwatering morsels for my "boys" today. —Ardys Smith, Palo Alto, California

Ingredients

  • 1 cup butter, softened
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1-1/2 cups quick-cooking oats
  • 1 cup flaked coconut
  • 5 milk chocolate candy bars (1.55 ounces each)

1 each: 91 calories, 5g fat (3g saturated fat), 12mg cholesterol, 71mg sodium, 11g carbohydrate (6g sugars, 0g fiber), 1g protein Diabetic Exchanges: 1 starch, 0 fat.

Directions

  1. Preheat oven to 350°. In a large bowl, cream butter and sugars until light and fluffy. Beat in egg and vanilla. Combine flour, baking soda and salt; gradually add to creamed mixture and mix well. Beat in oats and coconut.
  2. Roll into 1-in. balls. Place 2 in. apart on ungreased baking sheets; flatten slightly. Bake 10-12 minutes or until lightly browned.
  3. Break each candy bar into 12 pieces; press a chocolate piece into the center of each warm cookie. Remove to wire racks. Yield: 5 dozen.

"Very tasty cookies. My granddaughter helped me and she loves sprinkles so that was an addition I made. Otherwise I stuck to the recipe. I stored them in an air tight container and they remained soft and delicious. I'll definitely be making these again."

"Just made these and they're delicious. I made them exactly as directed and flattened slightly as stated using a fork dipped in flour. I'm guessing the cookies in the photo are made extra large because you only get 12 chocolate rectangles in each candy bar; 5 x 12=60 pieces. There's not enough chocolate to put two on each cookie and not enough room on each cookie to put more than one piece. I'll be making these again at Christmas!"

"It's amazing how many people will change a recipe without trying it first! When I saw this recipe I knew I had to try it. At halloween time because we only get about 12 treaters I buy the full size Hershey bars. This year I had a package left and the next day is when I saw this recipe. I love coconut and oats are good for everyone. I love these cookies. They are a little crunchy on the outside, but very moist on the inside. They were a snap to mix up. I did not change a thing when making them. My kitchen was very warm so I put them in the refrig, to harden the chocolate before stacking. I will add them to my Christmas cookies list and I'm thinking of trying to add milk chocolate chocolate chips to the batter or spreading the bar to make them a little more atractive for gift giving. Thank you Ardys for sharing."
