Mom’s Sweet Potato Salad

- 3 pounds sweet potatoes, cooked, peeled and cubed
- 1/2 cup chopped onion
- 1 cup chopped sweet red pepper
- 1-1/4 cups mayonnaise
- 1-1/2 teaspoons salt
- 1/2 teaspoon pepper
- 1/4 teaspoon hot pepper sauce
- In a large bowl, combine the sweet potatoes, onion and red pepper. In a small bowl, blend remaining ingredients; add to potato mixture and toss to coat. Cover and refrigerate.
Nutrition Facts3/4 cup: 292 calories, 19g fat (3g saturated fat), 8mg cholesterol, 436mg sodium, 29g carbohydrate (7g sugars, 4g fiber), 2g protein.

Here's a tip I learned to prevent boiled potates from getting like mashed. Add several teaspoons of white vinegar to the water..a couple for a small pot to several for a large batch. Works every time to keep the potatoes from mushing up, no matter what kind of potato you're boiling!....and no, the potatoes don't taste like the vinegar:-)I did a variation of the ingredients that was really tasty too. Substituted blue cheese dressing for half the mayo and added raisins instead of red peppers.

I had the same problem. My sweet potatoes were more like mashed. I think this is the kind of recipe where they would say you should not even mix it too much so that the potatoes won't fall apart. It was tasty but I wouldn't try it again.

My sweet potatoes turned into mashed sweet potatoes. However, the recipe was still tasty!
