Egg salad is not something that sounds appetizing to me but I needed a use for all the Easter eggs my kids decorated. This was surprisingly good! I left out the pimentos because I don't really like them. The crunch from the pepper, celery and onions was a nice contrast to the creamy egg mixture. We ate it with saltine crackers rather than bread and it was delicious.
Great recipie. I had never thought to add cream cheese. I never add green peppers as they always overpower everything else.I use red or yellow instead.

very good recipe. it is very crunchy and different from other egg salad sandwiches.
