Moist Bran Muffins Recipe

These tender, slightly sweet muffins are a tasty way to round out any meal. The recipe makes a small quantity for a couple or a single person.—Mildred Ross, Badin, North Carolina

  • 1/2 cup All-Bran
  • 1/2 cup milk
  • 2 tablespoons vegetable oil
  • 1/2 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt


  • 1. In a bowl, combine the bran and milk; let stand for 5 minutes. Stir in the oil. Combine the remaining ingredients; stir into bran mixture just until moistened. Fill greased or paper-lined muffin cups half full. Bake at 400° for 18-22 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Yield: 4 muffins.

"I doubled this recipe and made 8 muffins. I added dried cranberries that I had soaked in boiling water to make them tender and chopped pecans. I also put a little turbinado sugar on top. Other than that, I followed the recipe. The muffins were easy to make and turned out very moist and tender. I will definitely make them again."
