Minty Watermelon-Cucumber Salad Recipe

Capturing the fantastic flavors of summer, this refreshing, beautiful watermelon-cucumber salad will be the talk of any picnic or potluck. —Roblynn Hunnisett, Guelph, Ontario
TOTAL TIME: Prep/Total Time: 20 min. YIELD:16 servings


  • 8 cups cubed seedless watermelon
  • 2 English cucumbers, halved lengthwise and sliced
  • 6 green onions, chopped
  • 1/4 cup minced fresh mint
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper


  • 1. In a large bowl, combine watermelon, cucumbers, green onions and mint. In a small bowl, whisk remaining ingredients. Pour over salad and toss to coat. Serve immediately or refrigerate, covered, up to 2 hours before serving. Yield: 16 servings (3/4 cup each).

"I made this last summer for a cookout and everyone loved it! Chilled it for a couple of hours first and it was very cool and refreshing. I have made it several more times since then for home and pot luck dinners and am always asked for the recipe. I make it like it is written except for using cucumbers from my garden when I can instead of English cucumbers and I do peel them first. It's easy to cut in half for just my family. "OMG this is quite a taste sensation! I read thru this recipe and tho't it a very strange combination, but after reading the reviews I decided to give it a try. It was amazingly good! DH declared it a keeper too. I did use white Balsamic, and maybe went a little light on the onions, but followed the recipe, and like everyone said, did not put the dressing on until right before we sat down to dinner. YUM! I'm sharing this one with my daughters."

"Great way to use watermelon. I followed the earlier suggestion to add the dressing just before serving. I also chilled the salad thoroughly beforehand, and kept it cold nestled in ice, as watermelon tastes so much better cold and makes a terrific contrast to hot BBQ'd foods. "What a fresh and delicious summer salad this is. I made it to take to a friend's house and everyone loved it. I suggest putting the dressing on just before serving for the best taste. Don't store any over night because the watermelon doesn't do well that long with the vinegar. That won't stop me from making it again, though. I'm taking it to my sister's 4th of July party and know everyone will love it."

"Just made this last evening to take to a dinner at a friend's house. It was so fresh and delicious. Everyone loved it. One thing I would caution, is to put the dressing on just before serving and don't make more than will be needed because the watermelon doesn't do well overnight with the vinegar. This wouldn't stop me from making it again. It's just too good. I'm making it for my sister's 4th of July party and know everyone will love it."
