Mini Ham 'n' Cheese Frittatas Recipe

I found this recipe a few years ago and tried to make it with it with a few changes. I'm diabetic, and this fits into my low-carb and low-fat diet. Every time I serve a brunch, the frittatas are the first thing to disappear, and nobody knows they are low fat! —Susan Watt, Basking Ridge, New Jersey
TOTAL TIME: Prep: 15 min. Bake: 25 min. YIELD:8 servings


  • 6 large eggs
  • 4 large egg whites
  • 2 tablespoons fat-free milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 tablespoons minced fresh chives
  • 3/4 cup cubed fully cooked ham (about 4 ounces)
  • 1 cup (4 ounces) shredded fat-free cheddar cheese


  • 1. Preheat oven to 375°. In a bowl, whisk the first five ingredients until blended; stir in chives. Divide ham and cheese among eight muffin cups coated with cooking spray. Top with egg mixture, filling cups three-fourths full.
  • 2. Bake 22-25 minutes or until a knife inserted near the center comes out clean. Carefully run a knife around sides to loosen. Yield: 8 mini frittatas.

1 mini frittata: 106 calories, 4g fat (1g saturated fat), 167mg cholesterol, 428mg sodium, 2g carbohydrate (1g sugars, 0 fiber), 14g protein. Diabetic Exchanges: 2 medium-fat meat.

"I made this recipe this morning and give it 5 stars. We loved it. I used low fat rather than fat free products and used green onion instead of chives. It made 10 portions instead of 8. Hubby and I both loved it and had very few left over. They are addictive. We will definitely have this again. I highly recommend this recipe.

"I used 7 whole eggs and one egg white and omitted the salt (I NEVER add salt when ham is an ingredient), and baked it for 20 minutes. It made 12 mini-frittatas. 3 of us polished them off in less than 5 minutes."

"These were very flavorful even after substituting with a pint of egg substitute, finely chopped canadian bacon and swiss cheese, skipping the milk. They are easy to store in fridge to eat throughout the work-week and by simply popping a couple of them in the microwave for 1 minute. Yum!"
