Melt-in-Your-Mouth Meat Loaf
Total TimePrep: 15 min. Cook: 5-1/4 hours + standing
- 2 large eggs
- 3/4 cup whole milk
- 2/3 cup seasoned bread crumbs
- 2 teaspoons dried minced onion
- 1 teaspoon salt
- 1/2 teaspoon rubbed sage
- 1-1/2 pounds ground beef
- 1/4 cup ketchup
- 2 tablespoons brown sugar
- 1 teaspoon ground mustard
- 1/2 teaspoon Worcestershire sauce
- Cut three 25x3-in. strips of heavy-duty foil; crisscross so they resemble spokes of a wheel. Place strips on bottom and up sides of a 5-qt. slow cooker. Coat strips with cooking spray.
- Combine the first 6 ingredients. Crumble beef over mixture and mix well. Shape into a round loaf; place in center of strips in slow cooker. Cook, covered, until a thermometer reads at least 160°, 5-6 hours.
- In a small bowl, whisk ketchup, brown sugar, mustard and Worcestershire sauce. Spoon over meat loaf. Cook until heated through, about 15 minutes longer. Using foil strips as handles, remove meat loaf to a platter. Let stand 10-15 minutes before slicing.

Delicious! I did make a few tweaks. I used 1 lb of a meatloaf mix, and 1/2 lb ground turkey (so it was a 4-meat meatloaf!). I used real onion instead of dry, and just eyeballed it (didn't measure). I doubled the sauce, then used 2 tbsp of it in the meat mixture. I put most of the sauce on top before cooking, which gave it a nice glaze. The last little bit of sauce we saved for leftovers (so they wouldn't get too dry in the microwave). I put aluminum foil over a rack inside a baking pan, poking holes in it to allow the grease to seep through. I cooked the meatloaf in the oven, 350deg for about 75 minutes or so (until the thermometer read just a bit over 160). Make sure to let your meatloaf sit so it doesn't fall apart too terribly when you cut into it. This was probably the best meatloaf I've ever made.

Everyone loved it! I used pounds of meat so I added a little more of spices. Also put the bbq sauce in with the meat. I also made it in the oven, 350 for about 1-1/2 hours. Added a little grated carrot for color. Can’t wait to make again!

My husband and I are vegan so I was making this for our college-age boys and their girlfriends and to use up the meat in our freezer. They all absolutely loved it. It sounded like it was better than the meatloaf I used to make using an onion soup mix packet. I made a few changes based on the other reviews here, and the fact that I was using 2 lbs of meat instead of 1 1/2 lbs as indicated in the recipe. My meat is in 1 lb packages and I didn't want a 1/2 lb hanging around my frig. I added a little extra of the seasons to compensate for the extra meat, and added a few turns of my pepper grinder since I love black pepper (even though I wouldn't be eating this. lol!) . Also, 1 review suggested adding the sauce to the meat instead of just on top, to add some flavor. So I made the sauce and put about 2 Tbs of it in the meat before shaping into a loaf. I also put the remaining sauce on top at the beginning of cooking instead of waiting till the end, just to make life easier. So, this got rave reviews and the boys sounded interested in making it themselves next time.

I've been making meatloaf for 50 yrs, sometimes good sometimes just ok. But this recipe is really good. I added some fresh parsley. I will make again. But watch your crockpot mine has different settings

I checked the magazine this recipe was published in and it says to cook on low. Overall this was good. The edges got a little dried out and it was done in about 3 1/2 hours. I doubled the sauce to use with a leftover meatloaf sandwich. It had too much mustard for my taste if eating it cold, but once it was heated it wasn't over powering.

My mom had a recipe that was almost exactly like this. She used oatmeal instead of bread crumbs, chopped onions, and two teaspoons of Worcestershire sauce in the meat mixture. She also put the sauce on top when she put it in the oven which made it like a glaze. All of my siblings and I have been making it for over 50 years this way. So many converts from the I hate meatloaf crowd!! lol.. The crock pot made it that much simpler.

I have made it more than once. The only variation to the recipe is that I use meatloaf mix instead of ground beef. It is the moistest meatloaf you will ever have. The sauce is the icing on the cake. We love it.

It's OK. Easy and really moist but pretty bland. The topping should have gone in the meatloaf and on top to give it more flavor. I cooked mine in the oven.

I agree with others - this is the best meatloaf I’ve ever had, and I’m VERY particular. I drained the fat once during cooking, and again at the end when it rests. I feel it’s important to note: The sauce is an important part of the whole. I will definitely make this again!
