Mediterranean Broccoli Slaw Recipe
- 1 package (12 ounces) broccoli coleslaw mix
- 1 cup (4 ounces) crumbled feta cheese
- 15 Greek olives, sliced
- 3/4 cup Greek vinaigrette
- 1. In a salad bowl, combine the coleslaw mix, cheese and olives. Add vinaigrette; toss to coat. Chill until serving. Yield: 5 servings.
3/4 cup: 240 calories, 20g fat (5g saturated fat), 12mg cholesterol, 788mg sodium, 8g carbohydrate (2g sugars, 3g fiber), 6g protein.

"As long as you really like feta cheese and Kalamata olives, you probably will enjoy this different slaw recipe. We like those flavors and this one provided a nice change from the typical American cabbage cole slaw with creamy dressing. I used "Paul Newman's Olive Oil and Vinegar" bottled dressing (as I always use for my Greek salads) and it had a very authentic Mediterranean flavor overall. You might want to play with the dressing/olives/feta amounts to get the right mixture for your personal tastes. Here is one caveat: I don't think many young kids would appreciate this particular version. Although a lot of young kids don't like the traditional slaw either until they get older!"
