Mama’s Potato Salad

- 3 to 3-1/2 pounds potatoes (about 10 medium)
- 6 hard-boiled large eggs
- 1 medium onion, finely chopped
- 1/2 cup mayonnaise
- 1/2 cup evaporated milk
- 3 tablespoons white vinegar
- 2 tablespoons prepared mustard
- 1/4 cup sugar
- 1 teaspoon salt
- 1/4 teaspoon pepper
- Additional hard-boiled large eggs, sliced
- In a large kettle, cook potatoes in boiling salted water until tender. Drain and cool. Peel potatoes; cut into chunks. Separate egg yolks from whites. Set yolks aside. Chop whites and add to potatoes with onion.
- In a small bowl, mash yolks. Stir in mayonnaise, milk, vinegar, mustard, sugar, salt and pepper. Pour over potatoes; toss well. Adjust seasonings if necessary. Spoon into a serving bowl. Garnish with egg slices and paprika. Chill until serving.

My husband loved this. It took me back to when my sister made potato salad and it was delicious.

Really good, simple recipe. Notice she doesn't add sweet pickles but a bit of sugar instead. This is a good, creamy potato salad.

A simple, really good potato salad! I used red potatoes and I did omit the evaporated milk because I was out of it. I always use sugar in my potato salad and love the depth of flavor it adds to it. I didn't use the full 1/4 cup of sugar, but added it to taste and just chopped the hard boiled eggs and added them to the mix. This potato salad is easy to make and really delicious! This will definitely make more appearances on our table this summer!

I do switch it up sometimes and make some changes, but this potato salad is by far our favourite in our house just the way it is

This is almost the same way that I make mine. I add celery and use red onion. And YES to all you naysayers I use sugar!! Everyone has different taste - I think relish/pickles is bad in potato salad.

My mother's recipe, which I have been making for well over 40 years, contains even less ingredients. Potatoes, eggs, and onion. Mayo and yellow mustard mixed together, with a little paprika sprinkled on top for color. Have never seen any reason for thinning it with milk, and cannot imagine sugar in potato salad. I also don't add salt or pepper, as people can season it to their preference.

I use dill pickle onion and Duke's mayonnaise. You were doing fine up until you added sugar and messed it up.

I usually use sour cream mixed with the mayo rather than evap milk, which I don't always have on hand, and I don't add the sugar - neither did my mom! Otherwise this is pretty much the same recipe my family has used for a long time. Sometimes I use green onions rather than mess with a big onion.

This is just like my mom's recipe, except she added celery and celery seeds. Some days, the 'sauce' just wouldn't set up so she would add a tablespoon of the liquid from a jar of dill pickles and that would straighten it right up! She used whatever milk was available. And, no, you don't really taste the pickles:)
