Ingredients

  • 4 packages (10 ounces each) frozen corn, thawed
  • 1 cup half-and-half cream
  • 1/4 cup butter, cubed
  • 2 tablespoons sugar
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1/3 cup all-purpose flour
  • 2 cups fat-free milk
  • 1/2 cup shredded sharp cheddar cheese
  • Minced fresh parsley

Directions

  1. In a Dutch oven, combine the first 6 ingredients. Cook and stir over medium heat until heated through, 8-10 minutes.
  2. Combine flour and milk until smooth. Stir into pan. Bring to a boil; cook and stir until thickened, about 2 minutes. Remove from the heat; stir in cheese until melted. Top with parsley.
Health tip: To make lighter versions of favorite recipes that call for cheddar cheese, try using less cheese but switch to sharp cheddar. It’s more flavorful, so you’ll still get a lot of cheddar goodness.
