Ingredients
- 1 package (3 ounces) lime gelatin
- 1 cup boiling water
- 1 prepared angel food cake (8 inches), cut into 1-inch cubes
- 1 package (8 ounces) cream cheese, softened
- 1/2 cup sugar
- 2 teaspoons lemon juice
- 1-1/2 teaspoons grated lemon zest
- 1 carton (8 ounces) frozen whipped topping, thawed and divided
- Lime slices, optional
Directions
- In a small bowl, dissolve gelatin in boiling water. Refrigerate until mixture just begins to thicken, about 35 minutes. Place cake cubes in a greased 13x9-in. dish.
- In a small bowl, beat cream cheese until smooth. Beat in sugar, and lemon juice and zest. Add gelatin mixture; beat until combined. Fold in 1-1/2 cups whipped topping.
- Spread over top of cake, covering completely. Refrigerate for at least 2 hours or until firm. Cut into squares; top with remaining whipped topping. If desired, garnish with lime slices.
