Lemony Chicken Salad

Ingredients

2/3 cup Miracle Whip or mayonnaise

2/3 cup sour cream

1 tablespoon lemon juice

1-1/2 teaspoons grated lemon zest

1 teaspoon salt

1/2 teaspoon dried tarragon

1/4 teaspoon pepper

4 cups diced cooked chicken

1 cup thinly sliced celery

1 cup chopped green pepper

2 large red apples, cut into 1/2-inch pieces, optional

1/2 cup chopped onion

1/4 cup minced fresh parsley

1 cup chopped walnuts
Directions

In a large bowl, combine the first 7 ingredients. Stir in chicken, celery, green pepper, apples if desired, onion and parsley. Cover and refrigerate for several hours. Stir in walnuts just before serving.
