Lemon-Basil Snow Peas
“Sugar snap peas are a delicious vegetable that often gets overlooked,” notes Mitzi Sentiff in Annapolis, Maryland. “We love the flavor of this crunchy side dish and its splash of lemon with broiled fish, chicken or pork.”

This is easy and fast - I spent more time stringing the peas than actually cooking the dish. I did not have bell peppers, so I used green onions like another commenter. I also didn't have quite enough snow peas so I mixed in chopped bok choy, which I had on hand. Great side dish!
I never review anything, but I'm reviewing this because it is tastes superb and is easy to make. Definitely string the peas--both sides. I chopped them into about 1" pieces and would do that again--easier to eat and more surface area gets coated with that delicious sauce. I didn't use the yellow peppers, but sliced up a couple of sad green onions that needed to be used and sautéed them with the garlic. The whole dinner was good, but these peas stole the show. Tonight I'm going to try this with some fresh green beans. I expect they will be outstanding, too!
