- 1 pound fresh asparagus, cut into 1-inch pieces
- 2 tablespoons water
- 2 tablespoons butter, melted
- 1 to 2 teaspoons lemon juice
- Pinch dried tarragon
- Salt and pepper to taste
- Place asparagus and water in a 1-1/2-qt. microwave-safe bowl. Cover and microwave on high for 4-5 minutes or until crisp-tender; drain. Add butter, lemon juice and tarragon; toss to coat. Sprinkle with salt and pepper. Yield: 4-6 servings.

"easy, yummy. I cut the recipe in half for just my husband and I. I also steamed the asparagus, since I think that gives it a better texture. Because I cut it in half it then called for 1/2 - 1 tsp of lemon juice. I did about 3/4 tsp. Next time I will bump it up to the 1 tsp. Make sure you add the salt... We felt the salt brought out the lemon flavor more. I'll definitely make this again!Update: This time instead of adding salt, I just used salted butter. That was enough salt for us. The 1 tsp of lemon juice (for half of the recipe) was good. Still a great recipe!"
