Lemon Angel Cake Bars

A neighbor gave me this recipe years ago and it's been in flavor rotation ever since. It can be made ahead and serves a bunch, so it's perfect for parties and potlucks. —Marina Castle, Canyon Country, California

Ingredients

  • 1 package (16 ounces) angel food cake mix
  • 1 can (15-3/4 ounces) lemon pie filling
  • 1 cup unsweetened finely shredded coconut
  • FROSTING:
  • 1 package (8 ounces) cream cheese, softened
  • 1/2 cup butter, softened
  • 1 teaspoon vanilla extract
  • 2-1/2 cups confectioners' sugar
  • 3 teaspoons grated lemon zest

Directions

  • Preheat oven to 350°. In a large bowl, mix cake mix, pie filling and coconut until blended; spread into a greased 15x10x1-in. baking pan.
  • Bake 20-25 minutes or until toothpick inserted in center comes out clean. Cool completely in pan on a wire rack.
  • Meanwhile, in a large bowl, beat cream cheese, butter and vanilla until smooth. Gradually beat in confectioners' sugar. Spread over cooled bars; sprinkle with lemon zest. Refrigerate at least 4 hours. Cut into bars or triangles.

    Absolutely delicious! Used sweetened coconut and baked it 25 minutes in a 9 X 13 glass dish. In the future, I will use lemon extract instead of vanilla. After I sprinkled on the lemon zest, I just lightly swirled it into the frosting, so no one got a mouth full of zest. Had a hard time finding the lemon pie filling. Ended up with Duncan Hines/Comstock Original Lemon Creme pie filling that I found in Winn Dixie, which I will buy again. It had a very nice lemony taste. This recipe is a keeper, per my husband.

    I was excited to try this recipe as I love Lemon! The angel food cake mix I purchased just called for water. Since I couldn't find lemon pie filling I mixed up a box of lemon pudding as suggested by other review and measured the amount called for. When I stirred the pudding into the cake mix it fluffed right up- making it a bit hard to spread evenly. Cake raised and browned- baked in 20 minutes but fell as I removed it from the over... leaving me with a flat sweet mess. I was very disappointed in the results. Didn't waste the yummy frosting on it.

    I thought these lemon angel cake bars were really good! Actually I had it for dinner last night, and brunch today. I probably won't eat real food until it's gone! This is the best frosting I have ever eaten. I am going to start using it on all my cakes now. next time I would add a little lemon extract to the cake because I did not think it tasted very lemony. I also added lemon extract to the frosting instead of the vanilla. Mmm Mmmm Good! Paul, This is angel food cake. It doesn't take all those things. Mine looked just like the picture. I use Betty Crocker angel food cake mix, with confetti. This cake if baked on its own only has to use water.

    Got a question. I time of grocery shelves having few choices, our angel food cake box has 2 steps, like over the last several decades...Your egg white separate...and needs to be beat for 5 minutes..grocer said generic merchandise available vs name brand...and will be that way during this COVID issue. Pre this, you could choose 1 or 2 step angel food cake mixes...Got some answers to help?

    I haven't made it yet but I'm very happy to have found this recipe. This is in response to Lesa: The recipe is correct as published. You can also make it using a can of pineapple. NO LIQUIDS are added just the can of pudding. When I make the cake using a can of pineapple I don't even frost it. I can't wait to try this and as soon as I get the lemon pudding I am going to make it.
