In-a-Pinch Chicken & Spinach

I needed a fast supper while babysitting my grandchild. I used what my daughter-in-law had in the fridge and turned it into what's now one of our favorite chicken and spinach recipes. —Sandra Ellis, Stockbridge, Georgia
Ingredients

4 boneless skinless chicken breast halves (6 ounces each)

2 tablespoons olive oil

1 tablespoon butter

1 package (6 ounces) fresh baby spinach

1 cup salsa
Directions

Pound chicken with a meat mallet to 1/2-in. thickness. In a large skillet, heat oil and butter over medium heat. Cook chicken until no longer pink, 5-6 minutes on each side. Remove and keep warm.

Add spinach and salsa to pan; cook and stir just until spinach is wilted, 3-4 minutes. Serve with chicken.
