1/2 gallon vanilla ice cream or flavor of your choice, softened
Directions
In a saucepan, combine brown sugar and butter; cook and stir until sugar is melted. Remove from the heat; stir in cracker crumbs. Place half of crumb mixture in a greased 11x7-in. dish. Carefully spread ice cream over crumbs (pan will be full). Sprinkle with remaining crumbs; gently press down. Cover and freeze until firm. Remove from the freezer 10 minutes before cutting. May be frozen for up to 2 months.

I tried this recipe and it is so quick and easy to prepare! I DID make adjustments to the recipe by using a combination of crushed Oreo chocolate sandwich cookies/crushed store-bought chocolate chip cookies to equal 1-3/4 cups of cookie crumbs. I used 1 QUART total:1 pt. Mississippi Mud ice cream and 1 pt. chocolate chip cookie dough ice cream which I'dput over crumb mixture. I put the WHOLE crumb mixture in 12x8" baking pan. I then topped it with the ice cream and sprinkle with about 3/4 cup more cookie crumbs, thenwrapped in heavy-duty foil and placed in my freezer!This dessert is definitely a keeper! I did keep the brown sugar and butter the same amount!I did NOT cube butter! I just melted the butter and brown sugar together!delowenstein
