Ingredients

  • 2 large eggs
  • 1 tablespoon olive oil
  • 1 cup semolina flour
  • 3/4 cup 00 or all-purpose flour
  • Sauce of your choice

Directions

  1. In a KitchenAid Stand Mixer using the Dough Hook Accessory, mix eggs and oil on low speed. Gradually add flour until dough is crumbly but can be shaped into a ball. Remove to a lightly floured surface. Cover and let rest at least 20 minutes.
  2. Roll the dough into walnut-size balls. Fasten Pasta Press Accessory to KitchenAid Stand Mixer using the Rigatoni Disc. Pass dough through press, cutting into 1-1/2-in. lengths as pasta is extruded, allowing pasta to fall onto a baking sheet lightly dusted with flour. Cook in boiling water until al dente, 3-4 minutes. Serve with sauce of your choice.
