Test Kitchen Tips
Cinnamon comes in two basic types: Ceylon and cassia. Ceylon cinnamon’s delicate, complex flavor is ideal for ice creams and simple sauces. The spicy, bolder cassia cinnamon (often labeled simply as cinnamon) is preferred for baking.
Nutmeg is the secret spice in many savory dishes. It’s commonly used in white sauces, pastas and potato dishes. Be careful not to overdo it. A small amount of the spice goes a long way.

I have used this recipe for years now instead of trying to buy expensive pumpkin pie spice! I can buy all of the ingredients at a reasonable price and use them as needed, along with being able to combine and make pumpkin pie spice!

This recipe is really good. I've used it in a few different recipes. I like it better than ones with allspice, because I prefer the bite of cloves to the sweetness of allspice. Also, I have the ingredients on hand in the pantry, so whipping up a fresh batch on short notice is never a problem.

Fabulous! Since I always have the ingredients on hand, I would much rather make this as needed using fresh spices.
