Holiday Cornflake Cookies
- 1/2 cup butter, cubed
- 40 large marshmallows
- 4 cups frosted cornflakes
- Red Hots
- Assorted sprinkles
- 1. In a 6-qt. stockpot, melt butter over medium heat. Add marshmallows; cook and stir until melted. Remove from heat.
- 2. Fold in cornflakes. Working quickly, fill 16 greased muffin cups two-thirds full. Using the end of a wooden spoon, make holes in centers to resemble wreaths. Decorate immediately with Red Hots and sprinkles.
1 cookie: 147 calories, 6g fat (4g saturated fat), 15mg cholesterol, 109mg sodium, 24g carbohydrate (14g sugars, 0 fiber), 1g protein.

We love cornflakes. This is definitely an oldie but a goodie. I did add green food coloring and just a couple of redhots. One trick if it's cooling off too fast is to turn on the oven to 350 degrees while you're mixing up ingredients, then turn off the oven. I popped the muffin tins in the oven for just a minute or two which softened it up just enough to get the red hots to stick. :)

No cookie tray is complete without these cornflake wreaths. We always add a bit of green food coloring for fun.

These are a Christmas tradition. I've made these with my daughter since she was small. She is now making them with her toddler. We add green food coloring to the melted marshmallow mixture before the corn flakes.
