Holiday Almonds Recipe

These sweet and flavorful nuts are addictive. They’re simple to make and I love serving them during at parties or as a satisfying snack. —Trisha Kruse, Eagle, Idaho
TOTAL TIME: Prep: 10 min. Cook: 20 min. + cooling YIELD:6 servings


  • 1/2 cup packed brown sugar
  • 1 teaspoon apple pie spice or pumpkin pie spice
  • 1/2 teaspoon curry powder
  • 1/4 teaspoon salt
  • 1 tablespoon egg white
  • 2 cups blanched almonds


  • 1. In a small bowl, combine brown sugar and seasonings; set aside. In another bowl, whisk egg white until foamy. Add almonds; toss to coat. Add spice mixture; toss to coat.
  • 2. Spread on a greased foil-lined baking sheet. Bake at 325° for 20-25 minutes or until lightly browned, stirring occasionally. Cool completely. Store in an airtight container. Yield: 2 cups.

"Does anyone know how to make cinnamon almonds? My granddaughter buys them like this at fairs and just loves them. Would I still coat them in egg whites and then toss in cinnamon/sugar? I tried making these once but the spice wouldn't stick. I wonder if I'd still want a little salt too. Also, would I still use blanched almonds?? Can anyone help?"

"Judy, I have made more of a recipe similar to this, with pecans. You will need 10 times the amount of each ingredient. However, I recommend doing each batch individually. First of all, it would be hard to find a bowl large enough to hold 20 c of almonds while still having room to mix everything. Plus, the individual almonds wouldn't get coated as evenly. Doing it individually ensures the proper results. Plus, as one batch fits on a cookie sheet, there's no need to guess how many to put on. I recommend tasting the first batch to make sure you like the ratio of ingredients given, as you can always adjust at this point for the rest of the batches. Good luck!"

"to mamainsonora re: how long to leave the nuts in boiling water to remove the skins. You leave them until they start to float, then you scoop them out and when you are able to touch them, you just pinch then end and the nut will pop out leaving you holding the skin.

" You can find them, in the baking section of the grocery store, already blanched.  It just means that the skins have been removed.

"How do you blanche alomonds? I understand you drop them in boiling water for a short period, but how long do they stay in the water?"
