Herbed Butternut Squash
- 1 medium butternut squash (about 3 pounds)
- 1 tablespoon olive oil
- 1-1/2 teaspoons dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1. Peel and cut squash crosswise into 1/2-in.-thick slices; remove and discard seeds. In a large bowl, toss squash with remaining ingredients. Grill, covered, over medium heat or broil 4 in. from heat 6-8 minutes on each side or until tender.
1 serving: 108 calories, 2g fat (0 saturated fat), 0 cholesterol, 205mg sodium, 23g carbohydrate (5g sugars, 7g fiber), 2g protein. Diabetic Exchanges: 1-1/2 starch, 1/2 fat.

We love squash and have it often. This was very good. We cook with olive oil, so this was a good recipe for us. I will make it agailn. Thanks.

This is a savory and delicious recipe. Grilling the squash gave it a slightly smoky taste and the herbs gave it a very savory taste. It's a keeper!!!
