Ingredients

  • 3 tablespoons vegetable oil
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • 1/2 teaspoon rubbed sage
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary, crushed
  • 1/4 teaspoon pepper
  • 1/8 to 1/4 teaspoon ground allspice
  • 1 bone-in turkey breast (4-1/4 to 6 pounds)

Directions

In a small bowl, combine the oil, brown sugar, salt, sage, thyme, rosemary, pepper and allspice. Carefully loosen the skin from the turkey. Rub herb mixture under the skin; rub remaining herb mixture over the skin.
Place turkey breast side up on a rack in a roasting pan. Bake, uncovered, at 325° for 1-1/2 to 2-1/4 hours or until a meat thermometer reads 170° (cover loosely with foil if turkey browns too quickly). Cover and let stand for 20 minutes before carving. Yield: 10-14 servings.
