Hearty Sausage ‘n’ Beans
Our son, Will, is a brand new dad. He cooked this blend of sausage, beans, tomatoes and rice when we came to visit our newborn granddaughter, Jenna. PERFECT for a cold night! Yummy, simple, quick. I cut this in half for my husband and I and we were able to squeeze out 4 servings (2 for dinner, 2 for leftovers). I used Hillshire Farm's already cooked Polish Kielbasa for the sausage, and cut each slice in half for easier eating. Definitely will be making this again.

loved this! Both of my picky boys ate all of it and asked for seconds. Only thing I changed was I used ranchstyle beans instead of pinto b/c that was what we had. Really good!
I have made this numerous times and my family loves it. I have taken it to church pot lucks and I have always come home with an empty pan.

I've made this recipe twice. First as it appeared in the magazine, the second time I made one change. Instead of using the tomatoes with mild chilies I used a can of tomatoes with habaneros. Gave it the right amount of punch. This was an easy weeknight recipe and I will be making it again.
This was very good considering how easy it was. I used turkey smoked sausage and ommited the oil using Pam instead to save calories. I also used black beans because that is what I had on-hand. My husband liked it and once I convinced the 4 and 5 year olds that it was good they ate it right up!
