Hearty Bean Soup

Ingredients

  • 1-1/2 cups dried great northern beans
  • 5 cups water
  • 3 cups chopped parsnips
  • 2 cups chopped carrots
  • 1 cup chopped onion
  • 1-1/2 pounds smoked ham hocks
  • 2 garlic cloves, minced
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1/8 to 1/4 teaspoon hot pepper sauce

Directions

  • 1. Rinse and sort beans. Place in a large saucepan; add water to cover by 2 in. Let soak, covered, overnight. Drain and rinse beans, discarding liquid.
  • 2. Return beans to saucepan; add water to cover by 2 in. Bring to a boil. Boil 15 minutes. Drain and rinse beans, discarding liquid.
  • 3. Transfer beans to a 5-qt. slow cooker. Add 5 cups water. Stir in remaining ingredients. Cover and cook on high until beans are tender, 6-7 hours.
  • 4. Remove meat and bones from slow cooker. When cool enough to handle, cut meat into bite-sized pieces and return to slow cooker; heat through.
