Gumdrop Cereal Bars

I was planning to make traditional marshmallow treats but didn't have enough Rice Krispies on hand, so I used Corn Pops instead and added gumdrops for color, and the result was spectacular.—Laura Tryssenaar, Listowel, Ontario.

  • 5 cups Corn Pops cereal
  • 1 cup gumdrops
  • 4 cups miniature marshmallows
  • 1/4 cup butter, cubed
  • 1 teaspoon vanilla extract


  • Place cereal and gumdrops in a large bowl; set aside. In a microwave-safe bowl, place marshmallows and butter. Microwave, uncovered for 45 seconds to 1-1/2 minutes or until melted; stir until smooth. Stir in vanilla.
  • Pour over cereal mixture; toss to coat. Spread into a greased 9-in. square pan. Cool on a wire rack. Cut with a buttered knife.

    Gumdrops or holiday M&M look festive in these classic bars! I ususally use a dish slightly larger than the square size, preferring a thinner bar. TIP- once completely cooled bars can be gently turned out into cutting board and cut with a large sharp knife resulting in perfect squares and placing in airtight container. As a volunteer feild editor with Taste of Home magazine I enjoy recipes that give variations to classic recipes.

    I can't believe I'm the first person to rate this wonderful recipe! I've made these delicious bars countless times since they appeared in a 2003 issue of Quick Cooking. If you like gumdrops and you like rice krispy bars, you'll LOVE these!!
