Ingredients
- 1 tablespoon canola oil
- 12 uncooked shrimp (31-40 per pound), peeled, deveined and cut into 1/2-inch pieces
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- GUACAMOLE:
- 1 medium ripe avocado, peeled and cut in half
- 2 teaspoons lime juice
- 2 tablespoons finely chopped red onion
- 1 tablespoon fresh cilantro leaves
- 1 garlic clove, minced
- Dash salt
- 30 tortilla chip scoops
Directions
- In a large skillet, heat oil over medium heat. Add the next 4 ingredients. Cook and stir until shrimp turn pink, 3-5 minutes. Transfer to a shallow dish. Refrigerate until chilled.
- In a small bowl, mash avocado with lime juice. Stir in onion, cilantro, garlic and salt. To serve, fill each chip with guacamole. Top with shrimp mixture. Serve immediately.
