Grilled Goat Cheese & Arugula Sandwiches
To create a more “grown-up” grilled cheese sandwich, I threw in tangy goat cheese and peppery arugula. I enjoy a similar combination on pizza, and it worked here, too! —Jess Apfe, Berkeley, California

We loved these. I made two "tweaks". Instead of arugula we used baby spinach. Also, instead of roasted red peppers (not my favorite), I roasted a variety of small tomatoes with some herbs and balsamic vinegar. We pressed the sandwiches in a panini grill. SO GOOD, we'll be making this again.
This recipe is super easy for a quick "fancy" looking dinner. Definitely will be making this again! My family loved it!
This sounded so great, that I did not change a thing when I made it. I used used store-bought sour dough bread and it was fantastic!

Unfortunately, those of us who don't live in California don't have access to REAL sourdough bread; and I really miss it!
