Ingredients

  • 1 tablespoon olive or vegetable oil
  • 2 teaspoons apple juice
  • 1 teaspoon cider or red wine vinegar
  • 1/2 to 1 teaspoon lemon juice
  • 1/2 teaspoon Dijon mustard
  • 1 cup torn mixed salad greens
  • Tomato wedges

Directions

In a small bowl, combine oil, apple juice, vinegar, lemon juice and mustard; mix well. Serve over greens and tomatoes. Yield: 1 serving.
