Green Pea Casserole

- 5 cups frozen peas (about 20 ounces), thawed
- 1 celery rib, chopped
- 1/2 cup mayonnaise
- 1/3 cup chopped onion
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 package (6 ounces) stuffing mix
- Preheat oven to 350°. Mix first six ingredients; transfer to a greased 11x7-in baking dish. Prepare stuffing mix according to package directions. Spread over pea mixture. Bake, uncovered, until lightly browned, 20-25 minutes.

Surprised by how much we enjoyed this casserole! I used a savory herb stuffing this time. We filed this recipe in the 'keeper' section. Onion and celery were both still a bit crunchy, and we like it that way.

Very good! Added 1/2 of a red bell pepper, chopped. Briefly precooked onion, celery, bell pepper in butter. Loved it!
