Green Bean & Corn Medley Recipe

A bright, colorful side option, this quick dish makes any entree look good. Make it with fresh veggies in the summer or as is with frozen in the winter months; either way, it's a winner! —Kimberly Stine, Milford, Pennsylvania
TOTAL TIME: Prep/Total Time: 15 min. YIELD:4 servings


  • 3 cups frozen cut green beans, thawed
  • 1 package (10 ounces) frozen corn, thawed
  • 2 tablespoons butter
  • 1 teaspoon canola oil
  • 1-1/2 teaspoons dried thyme
  • 1/4 teaspoon salt
  • Dash pepper


  • 1. In a large skillet, saute beans and corn in butter and oil until tender. Stir in the thyme, salt and pepper. Yield: 4 servings.

"I was fortunate enough to have farm stand fresh green beans and corn. We love onions, so I added a fine diced small white onion. I added a little water to the skillet. By the time the water evaporated, the veggies were crisp tender. Lovely taste with fresh thyme from my garden, too!!!"

"Recipes like these are very much the reason why I've loved Taste of Home since the 90s- family friendly food with easily available ingredients. Corn season is coming up soon, and I plan on using fresh and adjust the cooking time. If you aren't a fan of thyme, try basil or parsley."
