Greek Loaf Recipe
- 1 cup milk (70° to 80°)
- 1 tablespoon olive or vegetable oil
- 1/2 to 1-1/2 teaspoon salt
- 3/4 cup crumbled feta cheese or shredded mozzarella cheese
- 3 cups bread flour
- 1 tablespoon sugar
- 2-1/4 teaspoons active dry yeast
- 1/4 cup sliced ripe olives
- 1. In bread machine pan, place the first seven ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed).
- 2. Just before the final kneading (your machine may audibly signal this), add the olives. Yield: 1 loaf.
1 slice: 114 calories, 3g fat (1g saturated fat), 7mg cholesterol, 179mg sodium, 19g carbohydrate (0 sugars, 1g fiber), 5g protein. Diabetic Exchanges: 1 starch, 1/2 fat.

"I have used this recipe many times. I found it in a Taste of Home Magazine and decided to try it. I am always looking for different ways to make bread. The recipe sounded "yummy" and I had the ingredients on hand.My husband is a little cautious when it comes to trying new things but one bite and he was in love with it. He even asks me to make it when its been a while since I made some. I am going to make some tomorrow morning"
