Great Pork Chop Bake

A friend brought this hearty smothered pork chops dish to our home when I returned from the hospital with our youngest child. Since then, we have enjoyed it many times. It's a snap to throw together on a busy day, then pop in the oven to bake. —Rosie Glenn, Los Alamos, New Mexico

Ingredients

  • 1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
  • 3 tablespoons ketchup
  • 2 tablespoons Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 medium potatoes, cut into 1/2-inch wedges
  • 1 medium onion, sliced into rings
  • 6 bone-in pork loin chops (3/4 inch thick and 8 ounces each)
  • 1 tablespoon canola oil

Directions

  • In a large bowl, combine the soup, ketchup, Worcestershire sauce, salt and pepper. Add potatoes and onion; toss to coat. Transfer to a greased 13x9-in. baking dish. Cover and bake at 350° for 40 minutes.
  • Meanwhile, in a large skillet, brown pork chops in oil. Place chops on top of potatoes and onions. Bake, covered, until a thermometer reads 145° and potatoes are tender, 10-15 minutes longer.

    I don’t know if you are aware that the cooking directions for this recipe are completely different from the Taste of Home recipe book I purchased several years ago. My recipe says to brown the chops and pour the prepared onions and potatoes over the chops cook for 1 hour. I have already had them in the oven for an hour and a half. And after looking at them the only way they will brown is to uncover them at some point. I think the recipe sounds good but I am not sure if this is ever going to cook tonight. If it does I will try cooking it this way the next time. So this is more a comment on either a misprinted recipe or a tweaked recipe. I wish I could show you a picture because it is Rosie Glenn’s recipe so I know I am not crazy ( yet)

    I made this recipe as is and loved it. Then I made it with mushrooms instead of potatoes . Saut?ed the mushrooms in the same pan after the chops added the sauce and poured it over the chops to bake. Excellent!

    I made this recipe without adding the potatoes to the baking dish because I decided to make mashed potatoes instead. I love the sauce in this recipe. It was great over the mashed potatoes!

    I tried following the instructions but bought the incorrect soup, I used cream of mushroom. I actually seasoned my chops before adding the other ingredients. Overall I thought the meal wss tasty but too ketchupy for me. When I make this again I'll do without the ketchup.

    This is a great recipe. I did it in a slow cooker instead of the oven. They came out very tender. I didn't do the potatoes, instead I made rice. The flavor of the sauce was awesome. A real keeper in our house.

    This was extremely simple and therefore had a very simple taste. It wasn't bad, but I feel like I could have achieved the same result with BBQ sauce. Maybe we're just used to more complexity in a dish, but I won't be making it again.

    As written, this dish is ,4 star.But with very few changes this dish is a wonderful easy make ahead dinner. I double the onions. Then change the cream of chicken to cream of mushroom soup. I also add i pkg small portabellamushrooms...sliced. I usually double the entire sauce/ gravy recipe using 2 to 2. 1/2 lg onions. The pork, onions, and gravy freeze so well. Potatoes on the other hand do not freeze as well

    I loved the flavour, but the potatoes took way longer to cook than 50 minutes.
