  • 1/4 cup baking cocoa
  • 1 cup water
  • 1 cup butter, cubed
  • 2 cups sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup buttermilk
  • 2 eggs, beaten
  • 1 teaspoon vanilla extract
  • 1/2 cup butter, cubed
  • 1/4 cup baking cocoa
  • 1/3 cup milk
  • 3-1/2 cups confectioners' sugar
  • 1 teaspoon vanilla extract
  • Vanilla icing and pastry bag or large tube of vanilla icing


  • 1. In a large saucepan, combine cocoa and water until smooth. Add the butter; bring to a boil. Remove from the heat; cool.
  • 2. In a large mixing bowl, combine the sugar, flour, baking soda and salt. Add cocoa mixture and mix well. Beat in the buttermilk, eggs, and vanilla. Pour into a greased 15-in. x 10-in. x 1-in. baking pan.
  • 3. Bake at 350° for 20-22 minutes or until a toothpick inserted near the center comes out clean.
  • 4. For frosting, in a large saucepan, combine cocoa and milk until smooth; add the butter. Cook over low heat until butter is melted. Remove from the heat; stir in confectioners' sugar and vanilla. Spread over warm cake. Cool. Use vanilla icing to decorate like a diploma. Yield: 20-24 servings.
