Reviews for Golden Apple Snack Cake
"If you're looking for a recipe for a moist apple cake filled with juicy chunks of apple and a tender crumb .... look no further! This cake is VERY easy to make and is packed with apple and cinnamon flavors. I used margarine instead of butter and Gala apples (that's what I had on hand). I also baked it in a square glass baking dish .... lowered the baking temp to 325 degrees F and baked for 40-45 minutes. When it was cooled, I drizzled it with a glaze made from confectioner's sugar, cinnamon and milk. Next time I make it I want to try drizzling with caramel sauce or maybe browned butter and sprinkle with cinnamon sugar. VERY good cake!!"
"Fabulous! This is simple and very tasty. It was even better the second day. I left out the pecans but I thought it was still good without them."
"This was a big hit. The only change I made was to double the cinnamon, added freshly ground nutmeg (approximately 1/4 to 1/2 teaspoon), and because of nut allergies substituted 1/2 cup Craisins. My husband and kids loved it!"
"Made it last night.I found it necessary to bake at least 45 minutes. I was skeptical at first with the appearance of the batter mix.It was delicious. Will make it many times over with different apple varieties.Any suggestions?thanks."
"I have been making an identical cake to this one for many years... let me make it even simpler! There is no need to cream butter and sugar together, this is not a light airy cake . Put all the ingredients, except apples and nuts, into a food processor and pulse until you have fine breadcrumbs, like making a crumble. Then mix in apples, nuts (I prefer sultanas) and beaten egg until combined. Done!I too was sceptical about this cake, as a pro baker it goes against the principles of cake making, but it is simple and delicious.I use more cinnamon as I find the taste disappears during cooking. I also have made the same cake using pears and chopped stem ginger... yummy. If you want to take it a step further pulse together 1/4 cup butter (1 stick/4 ounces), 1/4 cup Demerara sugar, 1/2 cup all purpose (plain) flour, a good pinch of salt and one teaspoon of cinnamon until it resembles slightly chunky breadcrumbs. Sprinkly over the top for a delicious crumble topped cake. Don't over pulse as it will become cookie dough! What a versatile little recipe... :o)"
"Before writing this review, I emailed everyone I know this recipe! It is surprisingly wonderful. Made according to directions and was a bit skeptical before placing in oven. Much more like a thick dough than cake batter but it baked to a perfect tender texture. Unlike many apple cake recipes, this one the apple truely shines thru in the taste. I agree with others that the cut pieces look a little rustic but the flavor makes up for it. Baked exactly 32 minutes. Perfect."
"An excellent recipe...very moist and tasty. I added 1/2 a cup of raisins like someone suggested and omitted the nuts. I will definitely make this again."
"incredible only one egg and sooooo delicious.. mmmmh cinnamon taste and lots of apple fruit .. I loved it, my friends too mmmmh Looks like this, smell a lot and tastes so good. I put only a bit less as 3/4 sugar combined with Brown and White sugar"

"This recipe is a keeper! Moist and delicious. I used half all purpose flour and half King Arthur white whole wheat flour; it came out so light that next time I'm going to try all white whole wheat flour."
"I LOVE this! My husband does too, it won't last long at our place. I added just a splash of nutmeg and ginger and a cup of old fashioned rolled oats into the batter. So delicious! (I also used Fuji apples and it turned out wonderfully.)"
"I made this today and its fantastic! I also made it with pears instead of apples. My husband said it was perfect!"

"I emailed this to my daughter and ordered her to make this IMMEDIATELY. She made versions with and without nuts - I liked without nuts better, but both were absolutely fantastic. Only wish we'd had some vanilla ice cream."

"I've made this twice. First time as recipe given and it is excellent. 2nd time I changed the cup of sugar to cup of Splenda for baking and changed the Pecans for Roasted Walnuts, chopped. Pretty much the same tastes and moistness but Diabetic Friendly. Gonna try it again this tiem with a 1/4 Tsp of Nutmeg added and a Dark chocolate Drizzle after it cools."
