Gnocchi with White Beans
Total TimePrep/Total Time: 30 min.
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 1 package (16 ounces) potato gnocchi
- 1 can (15 ounces) cannellini beans, rinsed and drained
- 1 can (14-1/2 ounces) Italian diced tomatoes, undrained
- 1 package (6 ounces) fresh baby spinach
- 1/4 teaspoon pepper
- 1/2 cup shredded part-skim mozzarella cheese
- 3 tablespoons grated Parmesan cheese
- In a large skillet, heat oil over medium-high heat. Add onion; cook and stir until tender. Add garlic; cook 1 minute longer. Add gnocchi; cook and stir 5-6 minutes or until golden brown. Stir in beans, tomatoes, spinach and pepper; heat through.
- Sprinkle with cheeses; cover and remove from heat. Let stand 3-4 minutes or until cheese is melted.

This is a super quick, tasty, and easy weeknight meal. I have made this multiple times over the years with a few variations thrown in. You do have to use the shelf-stable Gnocchi, I tried frozen once and it turned to mush. I have added seasonings, artichokes, and olives over the years. We enjoy it as the recipe is written or with add-ins. If you like Gnocchi, give this one a try!

My sister made this recipe and shared some with me. I thought it was very tasty and hearty .... nice combination of textures with the gnocchi, beans and tomatoes. She made the recipe exactly as printed .... I would probably add either a can of chicken broth or another can of tomatoes. And maybe try using kale instead of spinach? This recipe is now on my recipe "rotation" and I'll be making it soon!

I had never eaten gnocchi before, so when it caught my daughter’s eye at the supermarket, I had to find a recipe and this was the one. The combination of beans and gnocchi was a new texture for me. Overall, this recipe has a well-balanced combination of flavors that we all enjoyed..I’m glad I stepped out of my comfort zone and tried something new. Will definitely make again!

Made this recipie many times and never fails to please. The only change I made was using whole wheat gnocchi and sauteed gnocchi in separate pan and added to sauteed onions and garlic...

I really liked this recipe. I did add an extra can of tomatoes, Italian seasoning and extra garlic. Also, I cooked the gnocchi separate in another pan as one person did and it seemed to get brown and stay firm. Will make again!

I'm reviewing this with my add-ins...i melted in spinach artichoke dip to provide a saucier texture. I added mushrooms, more garlic and used sun dried tomatoes.I love. Gnocchi, and this was a great and different way to enjoy it.

Pretty good. I learned a new way to make gnocchi too, I didn't realize it didn't need to be boiled! I did add chicken sausage and liked that. Also added some salt too.

Pretty bland and the gnocchi ends up really mushy. Ended up throwing the leftovers away. Won't make again

This dish was outstanding exceeded my expectations. I followed the recipes almost exact. One difference was in a separate skillet I put a tablespoon of olive oil and started cooking the gnocchi by themselves ( about 5 min ) while at the same time in the main skillet I was cooking the onions/garlic. This allowed more room in the skillet for the gnocchis to get nice and brown on all sides. I then added them to main skillet with the onions/ garlic and continue to follow the recipe . The pack of gnocchi I used was almost 18oz so I used 1 1/2 cans of diced tomatoes . I remove the casing from my sausage cut into little chunks and separated it with my fingers and added it at the same time as the spinach , beans and tomatoes.My husband and I loved this dish.I am including a list of my ingredients do to the fact that it turned out so good!FRESH gnocchi from Trader Joes Brand Pasta EmporiumCannellini white kidney beans Trader Joes ( the firmer the bean the better)Hunts fire roasted diced tomatoes.Pepper jack shredded cheese Trader Joes ( instead of mozzarella )Fresh grated imported Parmesan cheese.All Natural smoked turkey sausage ( kielbasa ) already cooked.Brand Garrett Valley at Sprouts comes in 12oz BUT only used 6 oz
