Gluten-Free Oatmeal Cookies

Ingredients

1 cup butter, softened

1 cup packed brown sugar

1/2 cup sugar

2 large eggs, room temperature

1 teaspoon vanilla extract

2 cups gluten-free all-purpose baking flour

3 teaspoons baking powder

2 teaspoons ground cinnamon

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon ground nutmeg

2 cups quick-cooking oats
Directions

Preheat oven to 350°. In a large bowl, cream butter and sugars until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Combine flour, baking powder, cinnamon, baking soda, salt and nutmeg; gradually add to creamed mixture and mix well. Stir in oats.

Drop dough by tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake until golden brown, 10-12 minutes. Remove from pans to wire racks to cool.
